Here’s what I plan to pack in my lunches this week:
- Monday: jasmine rice with leftover pulled pork, cucumber salad and green beans in sesame dressing
- Tuesday: jasmine rice with egg and sesame bean sprout salad; cherry tomatoes
- Wednesday: baked falafel, chickpea-carrot salad, cucumber salad
- Thursday: falafel on crunchy napa cabbage with carrots, cucumbers, tomatoes, pickled beets and tahini-yogurt dressing
- Friday: gazpacho; whole grain crackers with egg salad
