Weekday Lunches — Week of 8/18/2014

Here’s what I plan to pack in my lunches this week:

  • Monday: jasmine rice with leftover pulled pork, cucumber salad and green beans in sesame dressing
  • Tuesday: jasmine rice with egg and sesame bean sprout salad; cherry tomatoes
  • Wednesday: baked falafel, chickpea-carrot salad, cucumber salad
  • Thursday: falafel on crunchy napa cabbage with carrots, cucumbers, tomatoes, pickled beets and tahini-yogurt dressing
  • Friday: gazpacho; whole grain crackers with egg salad
