This salad is easy, full of familiar friends, with just a hint of surprise brought by the fennel. I made it to serve as a crunchy, refreshing counterbalance to rich corned beef and potato salad, and it did not disappoint. Even among diners who don’t really embrace fennel, the salad was happily eaten. That said, I, a longtime fennel lover, would have liked more fennel kick. I’m not sure if I just happened to have an especially mild bulb of fennel, or if the recipe needs more fennel in the overall balance.
