Ode to Wasabi Peas

Crunchy Asian Salad With Wasabi PeasThis crunchy Asian salad has been a favorite in my summer lunch lineup.  The ingredients vary based on whatever is available at the moment, but it is always fresh, nutritious, and full of crunch.

The salad has four basic layers:

  1. A base of finely chopped greens, often some combination of romaine lettuce, kale and Napa cabbage;
  2. Additional diced, grated or spiralized vegetables (the version in the photo contains spiralized carrots, zucchini, and beets);
  3. A tangy Asian dressing (today’s version contains lime, peanut butter, cilantro, garlic, soy and olive oil);
  4. A sprinkling of wasabi peas and slivered almonds.

The whole salad is satisfying, with its vibrant mix of nutrient-rich vegetables.  The dressing adds zingy flavor. The wasabi pea is the star of the show, though….a little garnish that elevates the salad from a quick lunch at my desk to something I would gladly serve to guests.  Try some on your next Asian salad and see if you’re not hooked!
